Wollersheim Winery & Distillery · Prairie du Sac
This Prairie du Sac winery makes ice wine, the sweet dessert wine made from grapes left to freeze on the vine rather than in a freezer, which winemaker Philippe Coquard calls the nectar of the vines. Wollersheim uses St. Pepin grapes, bred in Wisconsin in the 1970s for skins thick enough to hang through a late autumn. The site is a National Historic Landmark and runs tastings and tours. Order the ice wine cold, in small pours, with cheesecake.
Drumlin Ridge Winery · Waunakee
A winery set in the drumlin hill country just outside Waunakee, on the glacial ridges that give it its name and a setting unlike the flatter vineyard land further south. Visitors come for the tasting room and the view across the rolling terrain. It pours its own bottlings alongside Wisconsin fruit wines. Go for a flight on the patio and let the staff walk you through the cold hardy varieties.
Campo di Bella · Mount Horeb
A twenty acre farm winery near Mount Horeb that makes its wine from cold hardy grapes grown on the property, and cooks Italian and French leaning farm to table dinners by reservation on Friday and Saturday evenings. It sits about a twenty five minute drive from the city. Order the house vermouth, and the red wine vinegar to take home. There is an Airbnb on site if the drive back feels long.
