Brennan's of Houston, the Creole dining room in Midtown, has kept snapping turtle soup on the menu since it opened in 1967, and people flock here for it. The roux-dark soup is made with trimmed turtle meat, the holy trinity and boiled eggs that melt into the bowl, enriched with veal stock, livened with lemon juice and a dash of hot pepper sauce, and finished with the traditional splash of dry sherry at the table.
