Cielo Rojo, a homey, family-owned Mexican cafe in Takoma Park with a vegan-leaning menu and an eye for heirloom ingredients, makes its own take on red pozole. Co-owner and chef David Perez grew up on posole, which his family served on holidays; his broth is vegan rather than chicken-based, gets its crimson color and roasty flavor from an array of chilies, and is bolstered with red wine. Order the pozole rojo, with red hominy, cashew cream in place of crema, radishes, onions, lime and avocado, and chicken if you want it.
