Ciro Calvo cooked for Fulgencio Batista before leaving Cuba in 1959, and opened this restaurant on Race Street in 1994. Jennifer Echeverri bought it in 2001 and Calvo came back out of retirement to train her kitchen on his recipes; since 2018 it has run as a counter inside the SoFA Market. The lechon takes three days, marinated in citrus, cumin and garlic, then baked, rested a day and baked again in its own juices. Order that, or the pressed Cuban sandwich.
