Lallande, the Monroe Street bistro whose menu draws on family traditions and travels, changes its soups with the seasons. In winter the soupe à l'oignon gratinée takes center stage: yellow onions with shallot and red onion cooked slowly in beef stock, white wine and dry sherry, then covered with the house baguette and a heap of Gruyère and blasted until bubbly. Summer brings a bright magenta beet soup with lemon, dill and English cucumber. Order the French onion in the cold months.
