HongMing Wang brought the first kaiten, or rotating, sushi bar to St. Louis, and Dave Lowry's review for St. Louis Magazine notes that unlike the fast-food kaiten of Japan this one is built for a long sit, with roomy booths and sleek minimalist decor. Ramen and the belt run together: take tuna, salmon and yellowtail as they pass, then order ama shrimp, salmon roe and eel from the tableside tablet and watch them arrive on miniature go-karts.
