Mesquite smoke defines Tacos Apson before the first tortilla reaches the plate. Carne asada, costillas, and other beef cuts cook over the open grill, developing char while staying juicy. Fresh tortillas, salsa, and simple garnishes give the meat space, and the counter's quick rhythm keeps everything close to the fire.
