Chef Bruce Piatek's dining room inside the Chase Park Plaza reopened as a French kitchen that dropped the white tablecloths but kept the table service. Sauce describes a beef tartare modernized with brunoise egg, crostini, cornichons and three dollops of hackleback caviar, and a steak au poivre cut from strip dry-aged three months in house, crusted in peppercorns and served with peekytoe crab and sauce Choron over fingerlings. George Mahe calls the room old-style cool.
