At Armature Works, Muchachas gives quesabirria tacos their proper moment: a crisp tortilla around birria, melted cheese, onion and cilantro, with savory consommé for dipping. The warm broth makes the rich, crunchy taco a full meal rather than a quick snack.

Jimmy's Tacos opened its Ybor City storefront after building a following at markets and catered events. The taco menu covers al pastor, carne asada and chicken, but the shrimp is its signature, served blackened with Cajun remoulade or grilled with mango salsa on handmade blue corn tortillas.

Mekenita Cantina gives tacos a Pacific twist with ancho seared ahi in crisp wonton shells, cucumber and wasabi sweet ginger aioli. The Seminole Heights restaurant still lists that dish alongside corn tortilla tacos filled with fish, smoked pork, shrimp, steak and vegetables.
