TEN Ramen · West Dallas
Tei-An chef Teiichi Sakurai opened this small counter in 2015 in a narrow open kitchen designed purely for making soup. There is no takeout, because the fresh noodles absorb broth too fast to travel, and the menu runs tonkotsu and shoyu bowls alongside mazemen and changing specials, served standing-room at the counter.
Wabi House · Lower Greenville, Dallas
Chefs Dien Nguyen and Kenzo Tran opened this izakaya-style ramen shop on Greenville Avenue in 2015 and expanded across the metroplex, including a Fort Worth outpost adding yakitori. Named for the Japanese idea of finding beauty in imperfection, it built its following on ramen, small plates, cocktails, and late hours.
Ichigoh Ramen Lounge · Deep Ellum
George Itoh, who cooked at Ippudo, and Andy Tam opened this deliberately low-key Deep Ellum ramen bar in 2018 with almost no signage out front. The kitchen turns out a spicy soboro shoyu ramen alongside its Ichigoh veggie buns, built on Itoh's years in the ramen business rather than any flash.
