Tei-An chef Teiichi Sakurai opened this small counter in 2015 in a narrow open kitchen designed purely for making soup. There is no takeout, because the fresh noodles absorb broth too fast to travel, and the menu runs tonkotsu and shoyu bowls alongside mazemen and changing specials, served standing-room at the counter.
