Bakery Four · Berkeley
Owner Shawn Bergin outgrew his original Highland operation and opened a larger Berkeley shop in March 2022, where a near-daily line forms for naturally leavened pastries, bread, bagels, and cream-filled cruffins. Sausage rolls and sandwiches on fresh baguettes round out a case that has made it one of the city's most sought-after bakeries.

Alen Ramos and Carolyn Nugent met working under Joel Robuchon and cooked at elBulli before selling pastries from their Parker home during the pandemic. In late 2021 they opened Poulette, turning out laminated pastries, breads, and naturally leavened bagels built with fine-dining precision and a case that changes with the season.
Reunion Bakery on South Pearl · RiNo
Ismael de Sousa closed his counter inside the Source on Brighton Boulevard in March 2026 and reopened that May as Reunion Bakery, in a larger Platt Park storefront on South Pearl Street with seating, a shop of Colorado cookbooks and an open view of the kitchen. Bon Appetit named the bakery one of America's fifty best new restaurants in 2019. Order the Portuguese pastel de nata, the Venezuelan sticky buns, the chocolate babka or a sourdough loaf with a crisp crust.
