El Sabor de Puebla · Emerson East
El Sabor de Puebla serves the tamales made by the family's tamale operation. The restaurant was one of the places supplied by Tamaleria El Poblano, whose kitchen turned out masa-stuffed tamales for shops and markets around Madison. The Fourth Street restaurant is the family's original dining room.
Zavala's Market & Taqueria · West Side
Tamales grew from the family’s weekend cooking into a regular part of Zavala’s market and restaurant. The kitchen makes red and green versions, sweet tamales, and rajas. They are sold on weekends alongside carnitas and other Mexican dishes. The Gammon Road shop keeps the tamale tradition that began in the family’s apartment kitchen.
