Foothills Meats has run this whole-animal butcher counter on Black Mountain Avenue since 2013, sourcing whole animals from small local farmers. Mountain Xpress's Kay West traces the business from a pickup truck at the Black Mountain Tailgate Market in 2001 through the butcher shop, then two Butcher Bar restaurants that owners Amanda and Casey McKissick sold or closed by 2022, and on to Skillet at 128 Broadway Street. The counter is the part that stayed. Order whatever is cut that morning.
