The Chop Shop Butchery · Charlotte Street
A whole-animal butcher shop on Charlotte Street that opened in 2011 and became a supply line for Asheville kitchens, among them Katie Button's Curate. Axios Charlotte describes dry-aged beef, free-range chickens and pastured pork from western North Carolina, plus lesser-known cuts such as chuck eye steak, priced the same at the Charlotte outpost the company added in 2024. The shop runs its own USDA processing facility in Asheville. Order a dry-aged steak, or ask the counter what came off the rail that morning.
Hickory Nut Gap · Fairview
Mountain Xpress surveyed the city of artisan butchers and quotes Brian Bermingham, market manager at the farm store in Fairview, on the unglamorous half of the craft, moving a pig or a steer from slaughterhouse hook to truck to a final rest on a cutting board. His standing answer to anyone who wants to learn is to come out to the farm and take a class. The counter sells the farm meat over the same rail. Foothills Butcher Shop · Black Mountain
Foothills Meats has run this whole-animal butcher counter on Black Mountain Avenue since 2013, sourcing whole animals from small local farmers. Mountain Xpress's Kay West traces the business from a pickup truck at the Black Mountain Tailgate Market in 2001 through the butcher shop, then two Butcher Bar restaurants that owners Amanda and Casey McKissick sold or closed by 2022, and on to Skillet at 128 Broadway Street. The counter is the part that stayed. Order whatever is cut that morning.
