The Local Palate walks a menu drawn from Black Appalachian fish-camp cooking: eight ounces of catfish fillet fried to a golden hue in the Good Hot Fish sandwich, a sweet potato cabbage pancake built on rice flour and Farm and Sparrow cornmeal, and trout bologna, steelhead pressed into a chub with bologna spices. Order the sandwich.
