Per the New Haven Independent, owner Eileen Zhou named the shop for her mother's family name, Shim. The chicken comes as drumsticks, strips, or boneless, fried and sauced, with pickled radish or coleslaw on the side. It is a focused, homestyle Korean spot built around one thing done well, the fried chicken.
