Musso & Frank Grill, the Hollywood steakhouse, has had its onion soup on the menu since it opened. The broth takes days: beef knuckle, chicken and short rib bones simmer for hours, and the stock is strained, cooled, reheated and reduced several times with roasted beef neck bones, mirepoix, tarragon, thyme and garlic before the soup is finished with sweet Maui onions caramelized in butter and some veal stock. The bowl is crowded with sourdough croutons and sealed with a slice of Gruyère and grated Gruyère. Order the French onion soup.
