    A longtime anchor of French dining in New Haven, opened in 1993 in the 1884 Union League Club on Chapel Street by chef Jean-Pierre Vuillermet, a Maitre Cuisinier de France. CTbites marked its 25 years with the deviled chicken in Dijon, veal Milanese over house fettuccini, and tarte tatin. The New Haven Independent reports it is still an actively invested room, with 2025 renovations to the dining room and a wine cellar in the works under new ownership.
