Carlos Hernandez brought this Mexican room back to Columbia in May after years in Jefferson City and Boonville, per Inside Columbia. The Columbia Missourian counts 25 combination plates built on tacos, enchiladas, chalupas, burritos and tamales, and lists tacos pescado, three tacos filled with grilled fish, among the house specials. Chips arrive with three salsas, a green tomato, a white jalapeno and sour cream, and a red tomato, for the colors of the Mexican flag.
44 Canteen · Downtown
Tacos became the focus of 44 Canteen's downtown menu after they outsold everything else on the original one, COMO Magazine wrote in its 2026 profile of chef Mark Sulltrop, and the magazine's 2025 downtown dining survey called them not your typical Tex-Mex fare. Inside Columbia singled out the Blackened Shrimp and Dirty Rice taco when the kitchen brought it back. The Ninth Street room keeps its craft beer and cocktail list alongside the taco board.
