James Beard Award recipient Kwame Onwuachi's Afro-Caribbean steakhouse, built around a glowing custom jerk pit and live-fire cooking in the former Bazaar Meat space. Steaks and seafood carry his own spice blends; the name nods to the Jamaican Maroons, and the room opened at Sahara Las Vegas in 2026.

Named for the cast-iron pot its stews are built in, with staff who walk newcomers through bammy, breadfruit, and ground provision. The vegan side runs deep too, an ital stew and jerk tofu alongside the usual jerk chicken and oxtail, on Durango in the southwest valley.
