hiko-A-mon · Westport Village
Kyoto born Chef Hiko runs a modern sushi bar and fish market with about sixty menu options, most in the single digits or low teens. Robin Garr's review dwells on how the plates look before you eat them. The market side means the fish turns over quickly, which is the whole argument for sushi here.
Sapporo Japanese Grill & Sushi · Highlands

Anko Sushi · Beechmont
Anh Le spent a decade as sushi chef and general manager at Hiko-A-Mon before opening this stall at the Louisville StrEatery in January 2024. Food & Dining covered the debut. A food hall counter run by someone with that resume is worth the drive down to Beechmont on its own.

Two chefs with twenty five years of kitchens between them opened it in 2018, and it moved to South Spring Street in September 2025 after leaving Mid City Mall. Robin Garr's verdict is that everything is good, which is a rare thing for him to write about an entire ramen menu.
