A perennial favorite just north of the Melrose District, Hana is a small, bustling eatery run by owner Lori Hashimoto and known for chewy takoyaki and a Hana Pride roll built from several kinds of fish with pickled burdock, avocado, and asparagus. It also does the classics well, from vegetable tempura to chicken katsu, backed by a deep sake and Japanese beer list.

Set in a refurbished 1960s motor lodge in South Scottsdale, Hai Noon is 2007 James Beard recipient Nobuo Fukuda's return, pairing a dim, rock-walled bar with dishes like sashimi spoons, whole fish served several ways, and duck breast with miso and mushrooms. It earned a 2023 New Restaurant honor from PHOENIX Magazine, and Sunday omakase puts the chef behind the bar.
