Izanami is the izakaya at the Ten Thousand Waves spa up Hyde Park Road, built on Japan's version of the casual bar, where you can take a roomy booth or the tatami room, sometimes beside a guest who has padded over from the spa in a robe. The kitchen sends out small plates for sharing, and the sake collection runs deep. Order a round of small plates for the table with a sake from the list.

The upscale izakaya at the Ten Thousand Waves hot-springs resort also runs one of the city's more serious sushi programs, paired with a premium Japanese sake selection. The Santa Fe Reporter's Top 10 feature praised its pristine sushi. Order the omakase chef's choice, or build a plate from the ahi tuna sashimi and the avocado-daikon roll. Sushi and sashimi service runs Wednesday through Saturday up on Hyde Park Road.
