Mampuku is a Japanese izakaya and ramen shop in a tucked-away corner of the Cerrillos corridor, with broths that run from light and subtle to heavy and powerful and ropy noodles beneath each one. The pork-rich tonkotsu comes in two versions, a red chile ramen with spicy ground chicken gives the menu a New Mexican turn, and the curry ramen carries tender brisket and jalapeño.
