Linda Libert has lived in the Niedermeyer Building since 2011 and spent seven years working toward this bar, which opened in June behind four newly planted southern magnolia trees and doors with dragon handles. Vox Magazine reports a list of whiskey, wine, beer and cocktails running from local Logboat Brewery products to whiskey out of Japan and Scotland. Bar manager Riain O'Ceallachain pours the Celery Saturn, gin and lemon juice and passionfruit syrup with celery and cucumber.

George Liggett sold fine wines, spirits and cigars at a downtown shop for a quarter century before he and his wife and business partner opened this room on New Year's Eve 1999. COMO Magazine notes the name comes from the French expression for a vineyard producing high-volume, high-quality wine, and describes an adjacent cigar lounge and a relocated tobacco shop next door. Liggett's own pitch is a glass of scotch in one hand and a cigar in the other.

Ali and Dan Bauer met working here, she on the line and he on the floor, and bought the room in July 2019 from the owners who had run it as The Wine Cellar & Bistro. COMO Magazine reports that Dan consolidated the wine list and built a drink menu carrying more cocktails, while Ali wrote a land-and-sea menu around branzino and oysters. The kitchen stays seasonal and buys from growers around Columbia.
