Bitter & Twisted Cocktail Parlour, the cocktail bar on Jefferson Street in downtown Phoenix, closes its regular list each winter and reopens as Sippin' Santa, a tiki-themed holiday takeover of the same room. The bar's pinup mural gets a Santa hat and beard for the season, and tiki mugs and inflatable decorations fill the space alongside a rotating list of new drinks. Order the original Sippin' Santa, a standing mix of aged Demerara rum, amaro, citrus and gingerbread that returns to the list every year.

Floor 13 Rooftop Bar, atop the Hilton Garden Inn in downtown Phoenix, becomes the local outpost of Miracle each winter, redecorating with new colors and glassware and rotating in new food and cocktails while keeping some crowd favorites. The bar adds one or two new drinks to its themed cocktail list every year on top of the ones that stay, including the Christmapolitan, a spiced-cranberry, rosemary-spiked riff on the classic, and the Snowball Old Fashioned, finished with a ball of ice. Order either standing cocktail, or ask the bartenders what is new on the seasonal list.

Trophy Room, a speakeasy-style cocktail bar reached through downtown Phoenix's Wren & Wolf, closes its regular menu each December and reopens under a new immersive holiday theme and full redecoration, with a different narrative and cocktail list built around it each year. Phones and cameras stay away from the bar to protect the disconnected mood. Order from whatever themed cocktail list is running that December, and expect the room's holiday concept, sweet one year and stranger the next, to be nothing like a standard tinsel-and-lights bar.
