The Pink Adobe · Barrio De Analco
Founded in 1944 by Rosalea Murphy and reopened in 2024, this landmark adobe just off the Old Santa Fe Trail was built, in the Santa Fe New Mexican's words, as 'an eatery that mixed New Mexican, French and Cajun cuisine.' More than eighty years on, that Cajun and Creole thread still runs through the kitchen alongside the green chile. Crackin' Crab Santa Fe Seafood Boil · DeVargas Center
A Cajun-style seafood boil house in the DeVargas Center, framed squarely as Cajun by the Santa Fe Reporter's 'Release the Crackin'' feature.
