Bo's Authentic Thai is Sasitorn 'Bo' Prakod's food truck at 502 Old Santa Fe Trail, across from the Capitol, with a menu that sets familiar dishes like pad Thai, spring rolls and Thai iced tea beside her own favorites: green and panang curries, a Thai-style fried rice and pad see ew, stir-fried flat rice noodles. On a cold day the hot, tangy coconut broth of the tom kha soup is the order. Order the pad see ew or a curry, with tom kha soup when it is cold out.

Sweet Rice Asian Express is a lime green food truck on Cerrillos Road with a streamlined menu of Thai and Asian classics: pad thai, kung pao, drunken noodles, basil stir fry, Thai fried rice and crab rangoon. Entrees can be built with shrimp, chicken, vegetables or fried tofu and cooked to your heat level. Order the drunken noodles with tofu, crisp outside and creamy inside, and a Thai iced tea.

Chai Yo is Tommy and Jang Fitzgerald's casual Thai eatery at La Tienda in Eldorado, opened in 2025, where Jang, who grew up in Lamphun Province and learned to cook from her grandmothers, works the wok. Her pad thai piles light-as-a-feather rice noodles with eggs, bean sprouts and green onions in a sweet-and-spicy sauce. Order the pad thai, the crispy veggie egg rolls and the king oyster mushroom with Thai basil.
