Rio Chama has poured wine and served dry-aged Black Angus prime beef a block from the state Capitol since 2001. Pasatiempo's review singled out the dry-aged prime rib, the New York strip, and the filet mignon as fatty and flavorful, with raw oysters on the half shell to start. Order the prime rib or the filet mignon, and open with the oysters or the chicken flautas.

Market Steer moved into the former El Mesón building downtown in 2024, where chef-owner Kathleen Crook runs a steakhouse built around prime cuts and a signature sauce flight. The Pasatiempo Dishing with Johnny Vee column highlighted the 18-ounce Prime Cowboy Ribeye and an eight-way flight of sauces, with the horseradish caramel a standout.
