Callie · East Village
Travis Swikard built Callie's menu around what grows nearby, drawing first courses from North Africa and the Middle East. Start with dips, including hummus with preserved lime and green zhoug, then the fermented carrots in burnt orange habanero dressing with cashew dukkah.
LEILA · North Park
In Leila's open kitchen, a vertical log fire cooks kebabs on long skewers while a tabun turns out naan, pita and barbari. Order kebabs with manakish and work through sauces including toum, amba, zhoug and garlicky yogurt.
Alforon Mediterranean / Lebanese Cuisine · College Area
George Salameh opened this small El Cajon Boulevard bakery after being laid off from a car dealership. Born in Lebanon, he could not find za'atar he liked here, so he sourced it abroad and shipped 3,000 pounds over. Order the za'atar flatbread, the traditional man'ousheh the shop was built around. The rest of the menu grew from customers asking for dishes they remembered.
